I just made these:
from the Chickpea Cutlet recipe in the vegan bible:
paired with the gravy recipe here I subbed earth balance for the margarine, and arrowroot as a thickener.
I took so long trying to decide just how I was going to eat these babies......over rice, noodles, on a bun, with a side of spuds...... that I gave up and just ate one plain. Even my 14yo son likes these.
This is a keeper!

Yeah- that is a great recipe! Although, some of my family thinks it to be a bit too chewy. Nice to have found your blog!

You know, you're right. I made 2 batches of these, intending to pan fry one batch, and bake the other batch to see which we prefer. But after we tried the pan fried (which was crisp on the outside, but chewy on the inside), we took the oven batch and then pan fried them for 4 min. on each side, and those were FABULOUS!
